Born in Buffalo, New York of Italian heritage, she had cosmetic surgery on her nose and chin at age 17, as a graduation gift from her parents. After graduating, Sable entered the pornographic film industry in 2004 after moving to Los Angeles. Keri moved around the country quite a bit throughout her life prior to her adult film career. She's lived in Phoenix, Arizona, Chicago, Illinois and San Diego, California.

She signed with Exotic Star Models, and continued to be represented by them after signing with Wicked Pictures, albeit for only print work.

Her first adult film was with Peter North. Many of her early films were gonzo productions, which helped her quickly become a popular actress. As she signed a contract with Wicked Pictures, president and owner Steve Orenstein observed that "Keri is destined to be the next big thing - we're very happy to have signed her."

Sable was delighted to be working for Wicked as she enjoyed the quality of their movies, noting that the first porn film she had ever seen was The Wicked One with Jenna Jameson. Her first role for Wicked was in Sold, where she worked with director Brad Armstrong and 2005 AVN Best Actress Jessica Drake.

As well as performing in movies, Sable plans to design her own series of exotic novelty items under the Wicked Toys line. According to an AVN interview, she had planned to receive breast implants in November 2005 as part of an attempt to shift her image from lolita roles in gonzo films to big budget contract work.

Keri Sable abruptly retired from the adult business at the end of 2005 without fulfilling her contractual obligations to Wicked. It has been reported that she had originally planned to move to the east coast to continue her education. It is unknown whether she did that or is now living in San Diego with her parents.
